Brownies from a Brownie

My sweet tooth always seems to flair up during those rainy weekend days, and today was one of those days. While trying to study for my history test and unable to shake that feeling of impending test-doom, I had a massive craving for something insanely sweet.

the other day was my mom's 50th birthday, and to celebrate we went out for dinner and had the most amazing dessert; a warm white chocolate brownie served with vanilla ice cream and whipping cream, d i v i n e.

as I was staring blankly at my Canadian history text book I remembered a brownie I had the other day at my mom's 50th birthday. We went out for dinner to celebrate and were served the most delectable dessert; a warm white chocolate brownie served with vanilla ice cream and whipping cream, d.i.v.i.n.e. and started drooling slightly. That was it, I was going to make a brownie. 40 minutes later, I was sitting on the couch, snuggled in my blanket savouring a triple chocolate brownie with cool whip...I didn't have vanilla ice cream unfortunately; an ice cream maker is on my birthday wish list this year; but it hit the spot beautifully, here's my version of happiness:



I added about a 1/2 cup each of semi-sweet chocolate chips, white chocolate chips, milk chocolate chips and chopped walnuts to my batter.

Easy Peasy Triple Chocolate Chip Brownies


4 Tbsp melted butter
2 eggs
1 cup sugar
1 tsp vanilla
1/2 cup flour
1/3 cup cocoa
1/4 tsp baking powder
1/4 tsp salt
walnuts, chocolate chips *Optional*

Directions

1) Heat oven to 350 degrees F. Grease a 9-inch square pan.
2) In medium bowl, stir butter, sugar, and vanilla together. Add eggs, and beat well
3) Mix together flour, cocoa, baking powder, and salt. Add to egg mixture, beat until well blended. At this point, if you'd like, you can add the nuts and chocolate chips to the batter
Spread batter into greased pan and bake for 20-25 minutes until brownies begin to "pull away" from the pan's edges.
4) Cool completely in the pan; once cooled, cut into squares and enjoy.

The results show that, over a long timeframe (13.4 years), women eating more than 2.5 servings of fruits and vegetable per day cut their risk of kidney cancer by 40%. Among the fruits, bananas were especially protective. Women eating bananas four to six times a week halved their risk of developing the disease compared to those who did not eat this fruit. The conclusion of the study is that frequent consumption of fruits and vegetables, especially bananas, cabbage and root vegetables, may reduce risk of kidney cancer. This is because bananas and many root vegetables contain especially high amounts of antioxidant phenolic compounds, while cabbage is rich in sulfur, necessary for effective detoxification of potential carcinogens.

Bananas are also a great post workout snack, they provide a burst of energy for your drive/walk/run home, and they also aid in muscle recovery.

Bananas also make a fantastic bread, the most magical bread in all the world of breads! Here is a recipe I grew up on, I modify it a bit during training season by taking out 1/4 cup of flour and adding vanilla protein powder, and instead of the oil I substitute for applesauce (the same amount). In off season I'll keep the original recipe but add walnuts, dried cranberries and white chocolate chips, I heart off season!

Mom's Banana Bread

1 1/2 cups + 4 tsp all purpose flour
2 tsp baking powder
1/4 baking soda
1/2 tsp salt
1 tsp nutmeg
2 eggs
2 Tbsp vegetable oil
2/3 cup sugar
1 cup mashed ripe banana; frozen or fresh

1) preheat oven to 350, grease a loaf pan or muffin tins.
2) Sift and measure flour. Add salt, baking powder, baking soda and nutmeg; mix well.
3) In a small bowl beat egg and oil, add sugar and banana; mix well.
4) Make a well in the dry ingredients, add liquid all at once; stir just until moist.
5) Bake for 45 mninutes if using a loaf pan, and 25 minutes if using muffin tins. let cool and enjoy!

a one, a two, a one, two, three!

Well let's see where this takes us shall we? This is my first attempt at blogging, and I must be completely honest with you when I say it was brought on by utter boredome, and excitement! Boredome by it being a Friday night and I'm at home on the computer, and excitement because the men's Canadian Hockey team just cinched a spot for the final game against the US....GO CANADA GO! I really have no idea what direction this blog will take, but I'm ready for the ride!
